it’s time for another recipe. Something super simple, yet delicious. And it’s gut friendly. So, if you’re looking for natural pro- and prebiotics, look no further.
Acv (apple cider vinegar) is one of my favourite staples in the kitchen. Why? Because it has the good bacteria for our essential gut health in it.
And if you ask me, I’d rather eat something natural than swallow pills. A healthy gut is key to a healthy immune system and if you want to know why, please read this post.
Are you lazy, but craving a healthy, gut-friendly and tasty dish? This salad will satisfy your wishes!
- 100 gr potatoes
- 100 gr sweet potatoes
- 100 gr zucchini
- 1 tbsp coconut oil melted
- 2 tbsp apple cider vinegar the fermented kind
- 1 tbsp date syrup
Preheat oven to 375°F.
Wash and peel your (sweet) potatoes and zucchini.
Cut into 1/2-1 inch cubes.
Coat them in coconut oil.
Put on a baking pan lined with parchment paper and in the oven.
Bake for 25 minutes, flipping them halfway trough.
TIP: If you like your zucchini on the crispy side, add them 10 minutes after the potatoes.
Mix all the ingredients for the dressing in a little bowl. Add more spices if you want 🙂
Prepare mixed greens of all kinds on a plate or bowl. I like a prepackaged blend of spinach, radicchio, lolla rosso or arugula.
