I absolutely disagree. Like who wouldn’t want to eat healthy raw vegan cookie dough???

When I was still going through my gastrointestinal diseases I made it my personal mission to create great tasting food despite being limited to certain food groups.

Now I embark on a new journey.

Combining gluten free and refined sugar free products into a delicious snack or breakfast that keeps you feeling energized despite being a dessert.

Ingredients
Applesauce
  • 2 apples of your choice (my favourite ones are Jazz/Scifresh)
Cookie Dough
  • 2 tbsp , heaping of almond flour
  • 1 tbsp erythritol (like Xucker)
  • pinch cinnamon
  • 3 tbsp applesauce (raw when made yourself, see applesauce section)
  • 1 tbsp cocoa nibs
Instructions
Applesauce
  1. Put the apples into the food processor and mix until it looks like applesauce

Cookie Dough
  1. Put the dry ingredients into the bowl and mix.

  2. Add the applesauce and incorporate. Adjust with more almond flour if it's too wet.

  3. Use half a tbsp of cocoa nibs and incorporate them into the cookie dough.

  4. Sprinkle the other half on top in addition with any other delicious toppings you love.

Recipe Notes

The applesauce should be put into the fridge and holds for a few days. I would suggest making the applesauce earlier and cooling it in the fridge.
Cold cookie dough tastes even better 😀

I kid you not, I could eat this every day. Yes, I love it THAT MUCH!
