Hey guys,
it’s getting so cold outside and that screams for comforting recipes! Because I’m honestly too lazy to cook several times a day, I need fast and easy recipes like a little veggie curry.
Time saving tip: just prep a huge amount on Sunday or any week you want. Meal prep doesn’t take long. Just spare 1-2 hours.

Here is a simple recipe 🙂

- 1 carrot
- 1/2 zucchini
- 1 small sweet potato
- 1 inch fresh ginger
- handful mungo beans
- 1/2 tsp turmeric
- dash black pepper
- dash cinnamon
- buckwheat flour, roughly 1 heaped tbsp or more
- basil, frozen
- parsley, frozen
- (plantbased) milk. I use coconut or almond milk

Cut the carrot, zucchini and sweet potato roughly in bitesize pieces.

Put the veggies with the piece of ginger into a pot and cover with water. Bring to a boil. When boiling reduce to medium heat, cover, and cook for 15 minutes.

Add the spices, mungo beans and herbs. Add a splash of (plantbased) milk.

Slowly add some buckwheat flour to thicken (you decide how you'd like the consistency to be). Let the mixture sit a minute and enjoy!

Best served with rice.
